This golden-coloured Champagne offers fine bubbles and a beautiful persistent cordon. Discrete and extremely delicate on the first nose, it opens up with notes of fresh summer fruit (pear) and flowers. The attack in the mouth is lively and noble at the same time. Bold, fresh and fruity (with notes of white fleshy fruit) on the palate. It offers a very pleasant acidic finish with a hint of floral aromas. Its fine long finish, accentuated by minerality and brioche-flavour notes, is what makes this wine stand out. Best served as an aperitif, with white fish, sea-food (in particular oysters) or fresh fruit desserts.
Its delicate and oily texture make it a perfect match for pan-fried Saint-Jacques scallops with citrus fruits, or turbot in Champagne sauce.
